The nature of our Cabernet Sauvignon is attributable only to the Chianti Classic zone and even more to the environment of Montefili. These vineyards were planted in 1981, with a smaller planting also in 1994, and show remarkable maturity - quite unlike other Cabernet Sauvignons of a similar age.
The choice of blending the Cabernet with Sangiovese stems from the desire to soften the power of the Cabernet Sauvignon. In doing so, we maintain its structure but it acquires greater freshness. For this reason, we selected Sangiovese that comes from slightly younger vines, age in 30hL barrels. The Cabernet is aged in 5hL tonneaux and in barrique (3.5hL).
It is only after the refining stage that we decide the quantity and blend for each vintage - there is no recipe, as we wish to appreciate the best qualities of every year's nature, therefore the percentage may vary year on year.
2018 was a relatively warm and temperate summer, with excellent ripening from the Cabernet Sauvignon and Sangiovese, but we are still some months off from deciding the final blend. The wines age separately for 22 to 24 months, followed by up to another year in bottle to allow the blend to settle in.
