This cuvée is a homage to Cabernet grapes. First of all the Chinon origined Cab Franc from 45 year old plants brings the great
freshness and straightness to the wine. Cab Sauvignon from Côtes de Bourg adds roundness and structure. Syrah and Grenache were allowed to enter the blend for a more complex and rich wine, adding spicy and ripe fruit notes. Slow fermentations and a 9 months long ageing in barrels of 3 wines have balanced and concentrated the wine. This wine is best enjoyed with a good meal.

Maceration is done respecting the potential of the grape without overextraction. Indigenous yeast and slow fermentation. No fining, no filtration and naturally stabilised on lees in barrels (3 - 5 wines) (modest deposit might occur depending on the cuvées) 1 - 2gr/L of sulfites are added if necessary during bottling to secure storage and transports.
