William Fevre Les Clos Chablis Grand Cru, 2009: Although the domaine was established in 1959 the Fevre family’s history in Chablis goes back over 250 years, during which much effort was devoted to extending and improving the estate and at the same time promoting the Chablis appellation. The famous Maisons & Domaines Henriot acquired the estate in 1998 and has continued along the same tradition until 2015 when the change to biodynamic viticulture was introduced. Preserving freshness and minerality, Cellar master Didier Seguierand lets the subtle nuances of the Chablis terroirs express themselves. The estate uses, instead of new barrels, patinated barrels aged on average 6 years. With more than half of its vineyard in Premiers and Grands Crus, all the subtlety of William Fèvre wines is expressed in the glass, a bouquet of energy: fresh fruits, white flowers, citrus fruits, radiant mineral notes and incredible purity. In the mouth, it is a real explosion of aromas, a perfect balance and a unique expression of freshness and elegance.
